Spicy Peanut Noodle Recipe:

This quick and easy recipe is for all the spicy lovers out there. An Asian inspired dish that my husband and I crave. Usually paired with my honey chicken (see previous post) to create a nice sweet and spicy balance.

Spicy Peanut Noodle Recipe

Prep Time: 5 Minutes

Cook Time: 25 Minutes Total Time: 30 Minutes

Serves: 4-6


- Carrot (1 stalk, shredded) - Broccoli (1 1/3 cups chopped) - Peanut Butter (chunky, 3 Tbsp)

- Olive Oil (1/2 cup) - Red Pepper Flakes (1 Tbsp) - Onion (1/4 cup, diced) - Soy Sauce (1/4 cup) - Honey (1/4 cup) - Linguine Noodles (3 cups, cooked) - Peanuts (optional for garnishing)

Directions: 1. In a large frying pan add olive oil and onions. Saute for a couple minutes. Add the red pepper flakes and simmer for another 5 minutes. Stirring frequently to ensure the red pepper flakes do not burn. Then add the soy sauce, honey, and peanut butter and simmer for 5 minutes. 2. In a large pot, cook pasta as directed on the box. 3. Add the broccoli and carrots while the pasta cooks. Once pasta is cooked, add to the sauce, toss and stir and cook for a few minutes. Top with Peanuts if desired. Bon Appetite
