This recipe idea came from a boxed soup recipe I love but wanted a healthier, less sodium/preservative option. So naturally I was on a mission to recreate this recipe with some wholesome ingredients. To be honest it took me three attempts to get it, but boy did I NAIL IT! This 30 minute recipe I'm throwing into rotation its that good.
Cook Time: 30 Minutes
Serves: 4
Ingredients: - Chicken Thights (5-6)
- Butter (1/4 cup) - Cornstarch (1/2 cup) - Salt and Pepper (to taste) - Garlic (3 cloves, minced) - Lemon (1/2 squeezed) - Chicken Broth (1 cup)
- Cream Cheese (1/4 cup) - Italian Seasoning (1 Tbsp)
Directions: 1. Using a medium frying pan, add butter and put on medium high heat. Pour corn starch onto a small plate. Coat each chicken with cornstarch on both sides. Once the frying pan is hot, fry each coated piece of chicken on both sides, 5 minutes on each side. Giving the chicken a nice brown crisp. Set aside. 2. Using the same frying pan, add garlic, Italian seasoning, and squeezed lemon. Saute for a minute or until fragrant. Add chicken broth and cream cheese to the mixture and bring to a boil. Stir continuously until cream cheese has dissolved into the sauce. 3. Add the chicken pieces back into the frying pan and sauce. Coat and cook the chicken for approximately 20 more minutes turning chicken every 5 minutes. The sauce will thicken up and coat the chicken thickly.
