Bacon Wrapped Mini Meatloaves | Baked or Smoked

These mini meatloaves wrapped in bacon are so easy to pop in your mouth your might forget how many you actually smashed. Serve as a main, a fun appetizer, or freeze for a quick and easy weekday meal.

Mini Meat Loaf

Ingredients: - Ground Beef (1lb, medium)

- Bacon (4 slices, cut in half) - Garlic (2 cloves, minced)

- Parmesan Cheese (1/2 cup) - Egg (1 large) - Italian Seasoning (1/2 Tbsp)

- Parsley (fresh, chopped, 2 Tbsp) - Worchestershire Sauce (1 Tbsp) - Mustard (1 Tbsp) - Salt and Pepper (to taste)

- BBQ Sauce (2 Tbsp)


Directions:

BAKE: 400 degrees for 20 minutes

SMOKE: 350 degrees for 1 hr. 1. Preheat your method of cooking you desire to make these mini meatloaves. In a large bowl mix all the ingredients except the bacon. I use my hands to really mix the ingredients well, but you can also use a large spoon. 2. Using your hands, roll 2" balls. Wrap a half a slice of bacon around it and place on a baking sheet. Slightly press down on the balls making the tops flat and helps seal the bacon to the ground beef mixture. Space 2" apart on your baking sheet. Pro tip: line your backing sheet with aluminium foil for a fast clean up. If baking, 400 degrees for 20 minutes and if you are smoking these, 350 degrees for 1 hr both until an internal temperature of 165 degrees.

3. Once cooked, brush with your favorite BBQ sauce.
