BBQ Sweet Potato Bites | Thanksgiving Food Ideas

Thanksgiving food ideas don't have to be boring. Sometimes venturing out and creating a new dish will have everyone talking about it over the Thanksgiving table. I deconstructed my sweet potato casserole and made these fun BBQ sweet potato bites that can be served as an appetizer OR as a side dish. Follow along as I show you just how easy these BBQ sweet potato bites really are to make.

I don't know about your family, but mine is very traditional. They like what they like, and do not usually change up the Thanksgiving meal plan. WHAT YOU WILL NEED

PELLET GRILL: I used my Pit Boss Grills Navigator

BUTCHER PAPER: I used my Pit Boss Grills Cast Iron

PELLETS: I used a Cherry blend by Pit Boss Grills

INGREDIENTS

Sweet Potato (Each medium potato yields 6-8 slices)

Brown Sugar (1/2 cup, divided)

Marshmallows (cut in half with scissors)

Pecans (1 per bite)

Butcher Paper or Parchment Paper

INSTRUCTIONS

Preheat your pellet grill to 350 degrees. These will only take about 20-25 minutes to cook. Do not overcook and burn the marshmallows. When they are slightly browned marshmallows and the sweet potato are soft they are ready.

While your grill is preheating, peel and slice your sweet potato into 1/4" slices. On a baking sheet lined with butcher paper, sprinkle half your brown sugar onto the sheet. Next, lay your sweet potatoes in the brown sugar. Sprinkle the rest of the brown sugar on top of the BBQ sweet potato bites. Cut your marshmallows in half with scissors and place on top of each sweet potato and top with a pecan (optional). Place directly on the grill until done. Serve as an appetizer or side dish. Enjoy!
