One Pan Easy Jambalaya


Obsessssssed with rice you guys. Make it a one pan / DISH and sign me up time and time again. Growing up we honestly did not it have too often. Constantly playing around with rice recipes. I've been making Jambalaya for over 4 years now. A steady in the rotation. Traditionally it is a dish that ingredients were such on hand (ie, fish, vegetables, various meats). I add the vegetables that I have in the crisper. Onions, red pepper, and Jalapeno are a must (which I almost always have on hand).

Jambalaya traditionally has okra and shrimp which you can add to this recipe. Okra has to be one of the veggies I do not like. And I do not add Shrimp because my husbands allergic to the stuff. Here is my take on a New Orleans Jambalaya. Prep Time: 10 Minutes Cook Time: 45 Minutes Total Time: 55 Mintutes Serves: 6

Ingredients

Rice (1 1/2 cups, Instant) Olive Oil (4 TBSP)

Chicken (2 chicken breasts, chopped)

Sausage (2 links, chopped)

Red Pepper (1 Pepper, diced)

Onion (1 medium, diced) Jalapeno (1 small, chopped finly)

Celery (3 stalks, chopped)

Carrot (1 stalk, chopped)

Diced Tomatoes (1 can) Chicken Broth (1 1/2 cup)

Garlic (4 cloves, minced)

Cajun Seasoning (1 TBSP)

Cayenne (1 tsp, optional)

Thyme (1 tsp)

Bay Leaf (2 leafs)

Salt and Pepper (to taste)

**Okra (3/4 cup, chopped) this is completely optional. I do not use in this recipe but very common to. Instructions 1. In a LARGE frying pan, heat oil on medium heat. Add chopped and diced vegetables. Saute until half done (Approx 7 minutes). 2. Add the chicken and sausage to the vegetable mixture until cooked. 3. Add seasonings and cook until fragrant (1-2 minutes). 4. Add diced tomatoes and chicken brother and heat. 5. Stir rice in thoroughly. Then reduce heat to a simmer and cover (15 minutes) Bon Appetite
