I first started making these DIY After Eights Peppermint Patty Recipe when I first met my husband. He was obsessed with Candy Canes that year. I absolute LOVE After Eights, York Peppermint Patties, and Pep Patties that I knew we would both just love this, easy Christmas Dessert. With very few ingredients and a strong fresh taste of peppermint this peppermint patty recipe is a total winner through and through. Make a head of time, Give out as gifts, Take away from dinner, or just as an after dinner treat.
This creamy velvet Centre, crunchie dark chocolate out, and a sprinkle of candy cane makes this DIY After Eight peppermint patty recipe simply irresistible.
THE GOODS Powered Sugar (2 1/4 cups)
Butter (softened, 2 Tbsp)
Peppermint Extract (2 tsp)
Milk (2 Tbsp)
Dark Chocolate Chips (1 cup)
DIRECTIONS
Combine powered sugar, butter (melted), peppermint extract, and cream in a bowl - mix together. Roll out mixture onto plastic wrap into 1 1/2" thick and put in freezer for 20 minutes.
Using a medium sized pot, bring 2" of water to a slow boil. Put a metal bowl (larger than the pot) on top of the pot. This is creative none-direct heat. Helping the chocolate not to burn. Slowly melt the chocolate stirring frequently. Once all melted remove from heat.
Having a piece of parchment paper ready to go, slice peppermint mixture into bite sized pieces (1/4" thick). Quickly dip each slice into the chocolate. Coat on each side and place on parchment paper. I often work in two batches, and keep half in the freezer as it melts quickly. Once all dipped, cool in a fridge, and eat as a cool refreshing treat during the holidays.
