Lucky Mint Chocolate Brownies

I'm a huge fan of the combo of mint and chocolate. Give me allll the Mentos, After Eights, Peps, and Junior Mints. During the holidays I usually create my own version of of peppermint patties. Melting (pun intended) one recipe with another, I'm taking the my peppermint filler and topping these brownies with it. Creating the perfect St. Patrick's Day Treat.

Ingredients: Brownie: - Brownie Box (I used - Egg (1 large)

- Olive Oil (1/3 cup)

- Water (1/4 cup)


Peppermint Icing:

- Icing Surgar (2 1/4 cup) - Butter (melted, 1/4 cup)

- Peppermint extract (2 tsp)

- Cream (4 Tbsp) - Green Food coloring (4-5 drops) Optional: Top and drizzel with milk chocolate Directions: 1. Cook brownies as directed by the box

2. In a small bowl, add all all ingredients and mix well. 3. Let brownies cool for 20 minutes. Spread icing over the whole brownie. Optional: heat milk chocolate in the microwave (30 seconds at a time) and with a spoon. I used a shamrock stencil
