After showing my Shepherds Pie that was topped with cauliflower broccoli mashed, I got a flood of people asking for the recipe. Making the mash was the easy part, but photographing essentially what is mush was the difficult part. When eating healthier, I make a large batch of this at the beginning of the week and substitute it with any starch side my husband prefers.

Cook Time: 10 Minutes
Total Time: 15 Minutes

Ingredients:
Cauliflower (Half floret)
Broccoli (One stem)
Laughing Cow Cheese (3 triangles OR cream cheese 1/4 cup)
Parmesan Cheese (1/4 cup)
Milk or Substitute (1/2 cup)
Garlic (2 cloves, finely minced)
Italian Seasoning (1/2 TBSP)
Salt & Pepper (to taste)

Directions:
1. in a large pot of water, par boil broccoli and cauliflower (partially boil). Drain.
2. Put all ingredients in a blender (including the boiled vegetables) and blend until smooth.
3. Serve immediately.
