Crispy Sweet Potato Fries


The KEY to having crisping sweet potato fries perfected!!

Prep Time: 30 minutes Cook Time: 30 Minutes Total Time: 60 Minutes Cooking Temperature: 425 degrees Ingredients: Sweet Potato (1 large) Olive Oil (1/2 cup) Corn Starch (3 TBSP) Paprika (1/2 TBSP) Cajun Seasoning (1/2 TBSP) Garlic Powder (1 tsp)

Parsley (dried, 1/2 TBSP) Salt and Pepper (to taste) (you really can play around with your seasonings with these fries)

Instructions: 1. Peel sweet potato. With a bowl of water on hand, cut sweet potatoes into even strips and submerge in the water. Let soak for a minimum of a half hour up to over night. This helps remove any excess starch (I believe this is a huge part of making these fries crispy). Once done soaking, pat completely dry. 2. Preheat oven to 425 degrees. Grease a large baking sheet. 3. Drizzle olive oil over bowl of sweet potatoes. Sprinkle corn starch, pepper, parsley, garlic powder, and Cajun seasoning. (**Important don't add salt until the very end. Salt draws out moisture making the fries sometimes soggy**) Toss thoroughly. 4. Place on baking sheet, making sure not to over crowd the fries. Bake for 15 minutes, toss and bake for an additional 15 minutes. OPTIONAL: Garlic Cajun Dipping Sauce: 4 TBSP Mayo, 1 TBSP Cajun Seasoning, 2 Garlic cloves minced. Let set for 1/2 hour.
