WHAT IS THE PINWHEEL BURGER
Unlike traditional patties, the pinwheel burger is made by layering ground beef and bacon, rolling it up like a jelly roll, and then slicing it into thick rounds that resemble pinwheels. When grilled or pan-seared, the bacon crisps up on the inside while the beef locks in all that smoky goodness.
It’s a stunning blend of visual appeal and flavor layering—each bite gives you meat, fat, smoke, and seasoning in perfect balance.

WHAT YOU WILL NEED
PELLET SMOKER (I used my Pit Boss Grills Titan)
BBQ RUB (I used Pit Boss Grills Competition Blend)
INGREDIENTS
Bacon (regular thickness, two slices per burger)
Ground Beef (regular, 1/2 cup per pinwheel burger)
BBQ Rub
INSTRUCTIONS
Start this pinwheel burger recipe by preheating your pellet smoker to 350 degrees. Lay out your regular cut bacon. It renders more evenly when thin cut. Using about 1/2 cup of your ground beef per burger, smash the ground beef onto your bacon slices. Roll each onto itself, and then the second slice of bacon/ground beef again. Season with your favorite BBQ rub.
Place each pinwheel burger on the grill grates directly. You want to slowly render each burger so the bacon cooks fully. The bacon grease will keep the ground beef moist. Smoke for approximately 1 - 1 1/2 hours, or until an internal temperature of 145 degrees. Enjoy!
