Love At First Sight

I've dreamed about cooking my first brisket and what it would be like. A large piece of meat said to be difficult to cook. Difficult to keep tender yet moist at the same time. There is trimming involved, the right seasonings to make the perfect crust. The anticipation as it sweats out, getting ready for the BIG day. . As the sun rises, and the wood chips warm, the day awaits us. With warm smells throughout the neighborhood, everyone knows its going to be a very good day. Taking a long nap in the morning, then spritzing off in the hot middles day. We wanted to go back cuddling in our blankets for the rest of the day. . The satisfaction at the end of day when you see that delicious crust. With the first slice, you know right away that all your efforts were noted and the juices run wild.
