The Best Blueberry Dessert

My husband brought home some beautiful blueberries this week and ironically I also purchased some knew miniature cast iron skillets that I was dreaming recipes for a fun. That is where it all began. Not being a sweet eater, I was thinking slightly sweet, creamy, and savory. Dropping the batter in a pool of butter, spreading chunks of cream cheese, and those warm soft blueberries popping in your mouth, sure sends your taste buds dancing. . YES I baked this on my pellet smoker. You can do anything your stove/oven can do and MORE! Smoked on my @LouisianaGrills #BlackLabel at 350 degrees for 30 minutes. Paired with @PitmastersChoicePellets fruit blend pellets, gave the dessert the perfect kiss of smoke. .

Ingredients:

Flour (1 1/2 cups) Sugar (1 cup) Salt (1/2 Tsp)

Vanilla Extract (1 Tbsp)

Baking Powder (2 tsp)

Milk (1 cup)

Egg (1, lightly beaten) Cream Cheese (1/2 cup, divided into cubes)

Butter (1/2 cup)

Blueberries (1 1/2 cups)

Directions:

In a large cast iron skillet, melt butter. In a large bowl mix all the dry ingredients (flour, sugar, salt, baking powder) then add milk, egg, and vanilla extract and mix thoroughly. Pour the batter directly into the melted butter. Do NOT mix. Sprinkle the blueberries evenly. Place chunks of cream cheese evenly. Smoke OR Bake at 350 for 30 minutes.
