Cozy Irish Beef Barley Stew


Irish Beef Stew

Fall is here and nothing smells like fall in our home like soup and fresh baked bread. My husbands Irish background has him craving this soup all Fall y'all and I'm sure your household will too. So pull out a big ol pot and let's get this soup started. Prep Time: 10 Minutes Cook Time: 1 Hour Serves: 6

Ingredients:

- Beef (beef chunk, 1lbs) - Guinness Beer (1/2 can) - Potatoes (2 medium, chopped in cubes) - Olive Oil (1/2 cup, divided) - Celery (2 stalks, chopped) - Onion (2 medium cooking onions, diced) - Carrots (2 stalked, chopped) - Cauliflower (2 cups) - Cabbage (1 cup, chopped) - Barley (pearl, 1/3 cup) - Beef Stalk (4 cups) - Water (3 cups) - Worcestershire Sauce (1 TBSP) - Garlic (5 gloves, minced) - Italian Seasoning (2 TBSP) - Bay Leaf (2) - Parsley (1 TBSP)

- Salt and Pepper (to taste) Directions: 1. Grab a large pot add the olive oil and set on medium heat. Start chopping up all vegetables (except potatoes) and as add as you go. Stirring often. 2. In a medium frying pan, add 1/4 cup of the olive oil and set on medium high heat. Once hot, add the beef and sear each side for 1-2 minutes each. Once seared add (with juices) to the vegetable pot. 3. Add Guiness to the pot and simmer for 5 minutes to release the alcohal content from the beer. Then add all of ingredients to the pot, and cook at medium heat to simmer for 1 hour. *Pro Tip: The longer a stew, stews, the more flavors that are brought out.
