Soup is all you really need to feel safe and warm on a cold wet evening. Its comfort food. Its in every home and in nearly every culture. Its traditional but also ever changing. With the creativity of your fridge and pantry items, its bound change and evolve over time.
Cook Time: 45 Minutes Ingredients:
Onions (1 large)
Sausage (mild or spicy. 4 links)
Potatoes (3 medium, cubed) Carrots (2 medium, chopped)
Celery (2 stalks, chopped) Zucchini (1/2 medium, chopped)
Butter (1/4 cup)
Garlic (5 Cloves, finely chopped)
Italian Seasoning (1 1/2 Tbsp) Parsley (dried, 1/2 Tbsp) Salt and Pepper (to taste)
Bay Leaf (2 leaves) Cream (table, 3/4 cup) Chicken Broth (4 cups or container) Water (1 1/2 cups) Directions: 1. In a large pot, add butter and onions. Remove sausage casings by squeezing out the insides. and add to the pot. Using a wooden spoon, roughly chop into small bits. Cooking along the way. 2. Add carrots, celery, and zucchini. Cook until sausage is fully cooked. Then add cubed potatoes and all seasonings. Cook until fragrant. 3. Add chicken brother and water. Cook for 10 minutes. Add cream and cook for another 10 minutes.
PRO TIP: Soups always taste better the longer they simmer. This is a bare minimum cook time. When making milk based soups, do not simmer the milk. The milk can burn in the process. Add towards the end.
