Smoked Canadian Back Bacon / Peameal Bacon

I'm ready to toot my own horn with this beauty. SMOKED Canadian back bacon or peameal bacon as we southern Canadians like to call it is the bees knees and here is how I did it....

Peameal bacon is wet-cured and rolled in cornmeal usually. I rubbed it down with Sweet Heat Rub from @LouisianaGrills and set it on a grated baking pan with water at the bottom. Water is optional but I wanted it ensure it was super moist. . With @PitmastersChoicePellets fruit blend in the hopper and my @LouisianaGrills grill set at low 200 we did this low and slow for 4 hours until an internal temperature of 165 degrees and a beautiful crusted bark. .
