Pan Fried Pickerel Walleye

I absolutely LOVE fish!! Any type, cooked any way!! Unfortunately my husband is allergic to shellfish and hates any of the sorts. When he is away for business, I GO TO TOWN!! Try this very Canadian recipe. It is not just for Pickerel or Walleye fish. Any white fish will work perfectily well with this recipe. My 2 year old every every bite. Prep Time: 5 Minutes Cook Time: 5 Minutes Total Time: 10 Minutes Serves: 4 Ingredients: Fish Batter: - Canola Oil - All purpose flour (1/2 cup) - Garlic Salt (1/2 TBSP) - Paprika (1 TBSP) - Pepper (to taste) - Egg (1) - Honey (1 TBSP - Optional) Canjun Sauce: - Mayo (4 TBSP) - Cajun (1 TBSP) - Garlic (1 clove, minced) Directions: 1. If you decide to go with the Cajun sauce, I suggest making it first. While you are making the fish, it has time to marinade just add all ingredients. 2. In a large frying pan, add oil and heat on medium high heat for a minute or two. 3. With a large plate, add flour and seasonings and mix together. 4. On another small plate, add egg and honey (honey is optional) wisk slightly. 5. Coat fish in egg mixture then flour mixture. Then coat again giving it an extra second coating. 6. Place in hot oil on each side for approx 2-3 minutes each side. Bon Appetite
