Classic Chicken Noodle Soup


Someone tell me why we associate Chicken Noodle Soup with being sick? It's the first thing I want to make when one of my humans gets the sniffles.  Sick or no sick this is a soup my hubs requests at least once a month.  Hearty and flavorful to say the least.

Prep Time: 5 Minutes Cook Time: 1 Hour

Total Time: 1 Hour 5 Minutes Serves: 4-6

Ingredients: - Chicken Drumsticks (4) - Chicken Broth (4 Cups) - Water (4 Cups) - Chicken Bouillon (1) - Onion (1 medium, diced) - Carrot (2, chopped) - Celery (2 stalks, diced) - Garlic (4 cloves, minced) - Italian Seasoning (1 1/2 Tbsp) - Parsley (1 Tbsp) - Salt and Pepper (to taste) - Olive Oil (3 Tbsp) - Pasta (3/4 cup, rotini or shell) - Barley (optional, 1/4 cup)

Directions: 1. In a large pot, on medium high heat, add olive oil, onions, carrots, and celery.  Once slightly tender add garlic and all seasonings. Stir for 1 minutes or until fragrant. 2. Add chicken broth, water, chicken bouillon, and chicken to the pot.  I believe the longer you simmer a soup the better it tastes. Simmer for a minimum 1 hour and up to 4 hours  3. The last 20 minutes add the pasta and or barley.   Bon Appetite.
