Berry Cream Cheese Cake | Grilled Desserts | BBQ Dessert Ideas

I love this berry cream cheese cake because I prefer grilled desserts with just the right amount of sweetness to them. This has a burst of berries from the strawberries and raspberries, a fluffy inside with a butter base, and then a tartness from the scoops of cream cheese. This grilled dessert is my all-time favourite and I will be yours too.


WHAT YOU'LL NEED

Pellet Smoker (I used my Louisiana Grills Founders Premier)

Cast Iron Pan (I used my Pit Boss Grills cast iron line)

YES, I baked this on my pellet smoker. You can do anything your stove/oven can do right on your pellet smoker. This grilled dessert was smoked on my LouisianaGrills Founders Premier at 350 degrees for 30 minutes. For more BBQ Dessert Ideas - CLICK HERE

Ingredients:

Cream Cheese (1/2 cup, divided into spoonfuls)

Raspberries (1 cup)

Strawberries (1 cup, sliced in halves)

Flour (1 1/2 cups) Sugar (1 cup) Salt (1/2 Tsp)

Vanilla Extract (1 Tbsp)

Baking Powder (2 tsp)

Milk (1 cup)

Egg (1, lightly beaten) Cream Cheese (1/2 cup, divided into cubes)

Butter (1/2 cup)


Directions:

Preheat your pellet grill to 350 degrees. In a large cast-iron skillet, pour your melted butter into the bottom. In a large bowl mix, all the dry ingredients (flour, sugar, salt, baking powder) then add milk, egg, and vanilla extract and mix thoroughly until there is no more clumps. Pour the batter directly into the melted butter. Do NOT mix (leaving the butter at the bottom so you berry cream cheese cake does not stick.


Next, place your strawberries, raspberries, and scoops of cream cheese evenly around your cake. Place your cast-iron skillet directly on your grill grates. Smoke OR Bake at 350 for 30 minutes. Serve immediately on its own, or add a scoop of ice cream for more of a sweeter treat.
