WHAT IS THE TORTILLA KEBAB?
Before we dive into how to make the tortilla kebab, let’s clarify what it actually is. A tortilla kebab is essentially a kebab-style filling (chicken, beef, or lamb) cooked with spices and herbs, then layered with tortilla.
WHY THE TORTILLA KEBAB IS A MUST TRY
Now that you know how to make the tortilla kebab, you can enjoy a satisfying meal that's quick, customizable, and packed with flavor. Whether you're meal prepping for the week or hosting a casual dinner, tortilla kebabs are a guaranteed crowd-pleaser.
INGREDIENTS
Tortilla Shells (large, 5-6)
Ground Beef (1 lb) Sausage (mild, 1/2 lb or two links skin removed)
Red Bell Pepper (1/2 chopped finely) Onion (1 small, diced finely) Garlic (4 cloves, minced) Parsley (fresh, 1/4 cup, finely chopped)
Salt and Pepper (to taste)
INSTRUCTIONS
First, let's marinade our kebab meat for a minimum of 30 minutes. Using a large bowl add your ground beef, sausage, red bell pepper, onion, garlic, parsley, salt and pepper and mix together thoroughly. Cover and place in your refrigerator for a minimum of 30 minutes up to 24 hours.
After you finished marinating your kebab meat, its time to arrange you tortilla kebab. Using a knife, square your round tortillas by removing each side. Next, spread approximately 1 cup of your marinated kebab meat onto one tortilla evenly. Cover with another tortilla and repeat the process until you have no more kebab meat (approximately 5-6 tortillas).
Next cut your tortilla kebabs into 2 1/2" stripes. Turn on its side and stack them all together. Now you can skewer your tortilla kebabs and cut them to suit your skewer. Once you have skewered your tortilla kebabs they are ready for the grill.
I used my asado open fire grill from, Charcoal Chariot (you can find a full review here). Set your charcoal, and get ready to place your tortilla kebabs on them. Cook on each side for approximately 15 minutes or until its reached an internal temperature of 165 degrees. Eat them on their own, or in a pita with all your favorite toppings. Enjoy!
