OPEN FIRE STUFFED MEATLOAF RECIPE

INGREDIENTS

Ground Turkey (1 lb, you can also use beef or chicken)

Egg (1 large)

Garlic (1 cloves, minced)

Italian Seasoning (1 Tbsp)

Mustard (1 Tbsp)

Soy Sauce (1 Tbsp) Bread Crumbs (1/2 cup)

Salt And Pepper (to taste) Cheese (marble, 5-6 slices) Ranch (3 Tbsp)


HOW TO COOK OPEN FIRE STUFFED MEATLOAF

Build The Fire

Start with a solid bed of hot coals rather than active flames. Begin by preparing your open fire on your Yoder, El Dorado. Raise your grill grates using the orange wheel. Release the heavy door for easy access to control your fire and air flow. Next, arrange your charcoal and or wood. You want steady low and slow heat. Safely, if you run your hands over the grates, you should not burn your hands. Once your fire is set, close the door and lower your grill grates to preheat your grill.


Prepare and Stuff The Meatloaf

Lay out some saran wrap on your table. Dump your ground turkey, egg, garlic, Italian seasoning, mustard, soy sauce, bread crumbs, salt and pepper. Mix thoroughly. You can also do this in a bowl and once mixed, place on your saran wrap. Push down and create a flat even rectangle shape. Spread or pour your ranch dressing onto the meatloaf. Next lay your cheese leaving about 3" from the bottom. Using your saran wrap to guide and help roll the meatloaf onto itself. Pinch the ends to seal it all together.

Place your prepared stuffed meatloaf on your grill grates. Using a pan or cast iron place it on top of your meatloaf. Low and slow cook your stuffed meatloaf. Approximately 20 minutes or when you think its cooked half way through, flip and place the pan on top again. Cook for another 20 minutes or until your stuffed meatloaf reached 165 degrees internally. Let rest 5 minutes before slicing.
