Goulash: Quick and Easy Dinner


Goulash is such a comfort food in our household.  Its the type of meal you use whatever you have on hand and throw it into a pan.  So this recipe is very flexible.  Not only does it only take 30 minutes to make, but its a one pan/dish kinda dinner.  The story behind the recipe is my Grandmother in law makes this EVERY time he sees her Grandson aka my husband.  She always makes sure it is on hand when we visit.  It was even talked about in our wedding speech.  So to say its a great fool proof recipe is an understatement.  I bond and get along with her so well because we both love to be in the kitchen.  You should see us on a long weekend at the cottage. We both love so hard by cooking for people.  

Prep Time: 10 minutes Cook Time: 20 minutes Total Time: 30 minutes Ingredients: 

Must Have Ingredients:

- Ground Beef (1 lbs) - Olive oil (2 TBSP) - Onion (1 medium, diced) - Garlic (3 gloves, finely chopped) - Italian Seasoning (1/2 TBSP) - Salt & Pepper (to taste) - Cajun Seasoning (1/2 TBSP) - BBQ (1/4 cup) - Potatoes (Canned, sliced) - Vegetable soup (1 can)  Variable Ingredients (you can swap these out with any other vegetables in your fridge) this is what I used tonight: - Celery (2 stalks, sliced) - Corn (1/2 cups frozen) - Zucchini (1/2 medium sliced) - Cabbage (1 cup chopped) Instructions: - In a pan, crumble and cook ground beef.  Set the meat aside.  In the same pan, add oil, onion and any vegetables.  Saute until tender. Add garlic and all seasoning spices and stir for about a minute or until fragrant. Add Potatoes, ground beef, and vegetable soup and simmer on medium heat until combined.  Bon Appetite.
