Dino Ribs or Beef Short Ribs, whatever you want to call them - smoked beef short ribs are my all-time favourite cook. How to cook beef short ribs in the low and slow glory makes this cook rewarding and so very tasty. Seeing that meat slide off the bone, with chunky bark, smoke ring, and juicy centre, you'll never cook them any other way.
WHAT YOU'LL NEED
PELLET GRILL: I used my Louisiana Grills Black Label 1200
PELLETS: I used my Louisiana Grills Cherry Blend
RUB: You can use any salt, pepper, garlic mixture OR I used @QueenOfTheGrills Beef rub
Unlike pork ribs where you want to remove the silver skin, beef short ribs - you do not! Because the meat sits on top of the bone, leaving the silver skin on ensures the meat does not fall off the bone during the cooking process. You do, however, want to remove any large masses of fat at the top as it will not render down. Beef short ribs usually come pretty well prepped but really dig for the hard fat to come off, as it just stays clumpy on the meat.
For these smoked beef short ribs, I'm using a mustard binder (on both sides) and rubbed down with Pitboss Grills "Chop House Steak" rub.
Preheat your smoker to 225 degrees. Place your beef short ribs directly on the grill. I like to use either a water pan and or a spritzing method. I SPRTIZ today with a beef broth, soy sauce mixture in a spray bottle.
How to cook beef short ribs AND get that chunky bark. During this first stage, you're looking for an internal temperature of around 165 degrees. This period is where I like to consider the "developing bark" stage. Let that smoke roll and try not to open your lid too much.
TO WRAP OR NOT TO WRAP?
I've done them both ways. Whichever way you go - you need moisture. So if you wrap your beef short ribs in butcher paper or aluminum foil at 165 degrees till an internal temperature of 200 degrees. OR you can leave your smoked beef short ribs unwrapped but ensure you spritz every 40 minutes to keep that moisture in.
Once an internal temperature of 165 degrees is met, decide whether or not you want to wrap and turn your pellet smoker grill temperature up to 250 degrees. You are now trying to obtain an internal temperature of 200 degrees.
Once you have reached your final temperature it is time to rest your smoked beef short ribs. Wrap in a towel and put in a cooler OR your microwave if they fit. Leave rest to obtain it own juices again for at least an hour.
HOW LONG DO BEEF SHORT RIBS TAKE TO SMOKE?
(Always go by internal temperature) It usually takes about 4 hours to reach an internal temperature of 165 degrees. Another 3-4 hours to reach an internal temperature of 200 degrees when wrapped. Then you want to rest your smoked beef short ribs about at least an hour. ESTIMATE TIME 8 hours
