Buttery Chicken Pasta Bake with a Butter Bacon Peppercorn Sauce - why yes, you heard correctly. Fall All-In-One Pasta Bake F-L-E-X so easy and delicious. Whenever the leaves start falling I naturally start craving all in one cast iron recipes. Add chicken and this is a weeknight dinner save.

INGREDIENTS

Chicken Thighs (4-6 pieces)

Pasta (Rigatoni, 1 cup)

Chicken Broth (1 cup)

Cheese (Marble, shredded, 1/2 cup)

Butter (1/2 cup)

Bacon (2 slices, chopped)

Onions (1 small, diced)

Celery (1 stalk, diced)

Zucchini (1/2 medium, chopped)

Garlic (2 cloves, minced)

Italian Seasoning (1 tsp)

Parsley (1 tsp and to garnish)

Tomatoes (optional, to garnish)

Salt & Pepper (to taste)


INSTRUCTIONS

Preheat your pellet grill to 300 degrees. I used my Louisiana Grill Founders Premier pellet grill. While your grill is preheating, season your chicken and get your other ingredients ready. When doing all in one cast iron recipes, I like bring all ingredients out with me. I'll also show you a convenient way you can organize and not forget anything while being at your grill.


For this buttery chicken pasta bake, season your chicken thighs on both sides with your favourite poultry seasoning. I used Citrus Parmesan by Louisiana Grills. Once your grill is ready, place your chicken thighs open wide directly on your grill. Let them get a good smoke bath on them before adding them to your cast iron.


PRO TIP (Muffin Tin Ingredient Holder)

Here is my all-in-one-cast-iron-fun trick. You don't want a million little dishes with all your ingredients. It's messy and a lot to carry out to your grill. Grab a small muffin bake ware. Add each ingredient to each hole. The deep pockets ensure the wind wont even blow your seasonings away.


After your chicken has been on for approximately 10 minutes. Place your cast iron skillet in your grill to preheat for a few minutes. Then toss in your butter, bacon, onions, celery, zucchini and saute until the bacon is cooked and the onions are transulscent (approx 7 minutes). Next you add your garlic and seasonings. Stir for a minute so they all become fragrant.


Next, add your pasta. Mix and stir very thoroughly. Cover your cast iron with either a lid or aluminum foil. Let sit for 5 minutes before stirring once more and adding your cheese and chicken. Cover your cast iron yet again for approximately 20 minutes or until almost all liquid has evaporated and your noodles are cooked aldente.


Garish with salt, pepper, parsley and tomatoes. Make sure you dig into this chicken buttery deliciousness.
