Smoked Spatchcock Chicken | Spatchcock Chicken | Butterfly A Whole Chicken


Smoked Spatchcock Chicken is one bird bursting with flavour. When you butterfly a whole chicken your able to rub down your spatchcock chicken on all sides, smoking it on all sides. It cooks faster, looks prettier, and will have your family super impressed with dinner.


With this recipe, I'm going to show you how to butterfly a whole chicken, which is also known as spatchcock chicken. I'm showcasing my new Sweet Heat Rub Recipe, or you can use your favourite poultry seasoning.

With this video, I show you how you can use your everyday kitchen scissors (the sharper the better, but any will do) to butterfly a whole chicken. Season the whole thing, and how I did a smoked spatchcock chicken. From start to finish, should take 1 hour 15 minutes.


WHAT YOU'LL NEED Scissors

Pellet Grill (I used my Louisiana Grills 700 series)

Poultry Seasoning


DIRECTIONS:

Preheat your pellet smoker to 275 degrees. It will take approximately 15 minutes to prep your spatchcock chicken, and another hour or so to smoke it. You want an internal temperature of 165 degrees in the breast and 180 degrees if you are checking the leg.


Using your kitchen scissors (the sharper the better) you want to flip the chicken over and butterfly the whole chicken. In order to do this, you will want to make two long verticle cuts on either side of its spine (see video). You can feel the spine and cut about 1/2" on either side.


SWEET HEAT RUB:

Brown Sugar (1/4 cup)

Paprika (1 Tbsp)

Sea Salt (1 Tbsp)

Pepper (2 tsp)

Ground Mustard (1 tsp)

Cumin (1/2 tsp)

Cayenne (1/4 tsp)

Garlic Powder (1/2 Tbsp)


Generously coat your spatchcock chicken with your favourite poultry rub, my Sweet Heat Recipe. It's simple, delicious and your smoked spatchcock chicken will have some serious colour to it.


Place your chicken directly on the grill, skin side up. Close your pellet grill and smoke for approximately 1 hour or the appropriate internal temperature of 165 degrees. Since your spin is removed, it is very easy to cut up and enjoy.
