There are so many great options when purchasing the best cut of beef for roast beef. In this roast beef deli meat recipe we used a top sirloin roast. You can also use leaner cuts like eye of the round, even a brisket flat. We are slowly smoking the roast, breaking down their fibers. We then thinly slice it, tenderizing it. Even the tougher and leaner roasts can be make into roast beef. I think the main point is finding a roast with a few fat ribbons, is symmetrical, so slicing is a breeze and you get some nice whole slices.
WHAT IS DELI MEAT? Deli meat is also known as lunch meats, cold cuts, sliced meats, or sandwich meats. In short, they are precooked or cured meats sliced and served either hot or cold. It is usually used for sandwiches, but now used in many different recipes. ARE DELI MEATS HEALTHY? They are a great source of protein. They are also filled with glues, saturated fat, sodium and nitrates. They are considered a processed meat. WHAT YOU'LL NEED SMOKE SPECIALTY ITEMS TO GET STARTED
Deli Slicer: This is a must when making deli meat. Roast beef is not cured and is usually a tougher cut of beef. Using a deli slicer you are cutting it to thin it actually tenderizes it in the process. Highly recommend investing in one if you can.
Smoker: For this recipe, we will be slowly smoking our roast beef. We used my Pit Boss Grills Savannah Onyx. I used their whiskey barrel pellets to give it some depth and great flavor.
Beef Rub: Any beef rub will work fantastic, or you can use equal parts salt, pepper, garlic. I used Texas Rub by Pit Boss Grills
ROAST BEEF DELI MEAT RECIPE 1. Preheat your pellet grill to 200 degrees. We are going low and slow with this tutorial on how to make deli meat.
2. Next, prepare your roast beef. We used a top sirloin roast. Coat the whole thing in a thin layer of mustard. Next, using your beef rub, layer a thin coat evenly. Place your roast directly on your grill grates.
3. Keep an eye on the internal temperature of it. You are aiming for an internal temperature of 130 degrees. Once it has, remove the roast from your pellet grill. Let it rest and cool down slightly for 20 minutes. Place in saran wrap or a air tight container and place in your refrigerator till the next day. 4. Once your roast beef has fully cooled in your fridge, it is time to slice. The reason you want it fully cooled is because it is much easier to slice. We sliced it on level 1 1/2 and loved this thickness. Cut as you desire. We sectioned 5-10 slices and froze them this way. We pull out as we use them throughout the week. Enjoy!
