WHAT IS THE BEST CUT FOR THIS TURKEY DELI MEAT RECIPE

For this turkey deli meat recipe, I suggest getting boneless turkey breast. It can be either with or without skin but I highly recommend with skin as it adds more flavor it believe. You want the biggest turkey breast you can find as it will lead to the largest yield.


WHAT IS DELI MEAT? Deli meat is also known as lunch meats, cold cuts, sliced meats, or sandwich meats. In short, they are precooked or cured meats sliced and served either hot or cold. It is usually used for sandwiches, but now used in many different recipes. Most times they are processed with cures and brines.


ARE DELI MEATS HEALTHY? They are a great source of protein. They are also filled with glues, saturated fat, sodium and nitrates. They are considered a processed meat. Although I sometimes cure with nitrates, this series of How To Make Deli Meat is geared towards making deli meat more healthier for my family.

WHAT YOU'LL NEED SMOKE SPECIALTY ITEMS TO GET STARTED

Deli Slicer: This is a must when making deli meat. Roast beef is not cured and is usually a tougher cut of beef. Using a deli slicer you are cutting it to thin it actually tenderizes it in the process. Highly recommend investing in one if you can.

Smoker: For this recipe, we will be slowly smoking our turkey breast. We used my Pit Boss Grills Savannah Onyx.  I used their whiskey barrel pellets to give it some depth and great flavor.

Poultry Rub: Any poultry rub will work fantastic, or you can use Chicken & Poultry Rub by Pit Boss Grills Butchers String: simple butchers string to keep the turkey breast secure.







HOW TO MAKE DELI MEAT: TURKEY DELI MEAT RECIPE

  1. Prep your turkey breast. For this turkey deli meat recipe, I believe securing and trussing your turkey breast to keep it extra tight is a key step and process. If you have a skin on turkey breast, roll and make sure the skin is covering most parts of the breast. Secure and truss with butchers twine.

  2. Once your turkey breast is secured place it onto a turkey brine. This will help make for a delicious and moist turkey deli meat recipe. You want to brine your turkey for 6-24 hours in your refrigerator. We went for 8 hours while doing this recipe together.   3. After the brine is done, remove the turkey breast, pat dry, and use your favorite poultry rub. Preheat your pellet smoker to 250 degrees. We are going to smoke this turkey breast low and slow. We are looking for an internal temperature of 165 degrees. Once it reaches the internal temperature, wrap it in saran wrap. Place in your refrigerator for 24 hours.

  4. Once your turkey breast has fully cooled in your fridge, it is time to slice. The reason you want it fully cooled is because it is much easier to slice. We sliced it on level 1 1/2 and loved this thickness. Cut as you desire. We sectioned 5-10 slices and froze them this way. We pull out as we use them throughout the week. Enjoy!
