SHEET PAN CHICKEN POT PIE RECIPE

Chicken (approx. 2 cups chopped)
Butter (1/4 cup)
Flour (1/4 cup)
Onion (1 medium, diced)
Carrots (2 medium, sliced)
Celery (2 medium, sliced)
Garlic (4 large cloves, minced)

Dried Parsley (1/2 TBSP)
Dried Thyme (1/2 Tsp)
Salt & Pepper to taste
Chicken Broth (1 cup)
Milk (1 cup)
Pastry Sheets (2)
INSTRUCTIONS
Preheat your pellet grill to 400 degrees. In a large cast iron pan, add you carrots, onions, celery, butter and flour and place on your grill grates. After about 10 minutes, mix together. The butter and flour with create a roux over your vegetables. Once your veggies are almost cooked through (about another 10 minutes) add your garlic, and seasonings. Mix for another 2-5 minutes.
Next slowly add your chicken broth. Once it is absorbed, add your milk. Stirring frequently. After about 15-20 minutes your chicken pot pie mixture should be thick. Add your chicken and stir one final time. Using a sheet pan, lay out your pastry, add your mixture, and seal with the second pastry sheet. Place back onto your grill for another 15-20 minutes or until crispy and golden. Slice and enjoy
