Rattlesnake Bites Recipe | Jalapeno Rattlesnake Bites on the Pit Boss Griddle
Seeing this popular copycat recipe from Texas Roadhouse intrigued me. These rattlesnake bites recipe typically is done in the air fryer or deep fried. I wanted to challenge myself, bring the recipe outdoors, and shallow fry these on my Pit Boss Griddle. A crispy exterior with a cheesy jalapeno ooey gooey inside makes for one delicious bite. Let me show you how easy Jalapeno Rattlesnake bites on the Pit Boss Griddle.
Jalapeno rattlesnake bites on the Pit Boss Griddle originally is made with a egg wash, but we use mayo. Not for the flavor but its more cost efficient and has the same ingredients in it. We did a shallow fry so we could bring this recipe on the griddle. It is so delicious!!
WHAT YOU WILL NEED
GRIDDLE or CAST IRON PAN
I used my Pit Boss Grills griddle. They also have a fabulous line of cast iron pans and roasters.
PREP TIME: 40 minutes
COOK TIME: 10 minutes
Pepperjack Cheese (3 cups, shredded)
Jalapenos (2 medium, finely diced)
Mayo (1/2 cup)
Panko (1 cup)
Paprika (1 tsp)
Garlic Salt (1 tsp)
Butter (1/4 cup)
Prepare your rattlesnake bites by incorporating your pepper jack cheese and jalapenos. Using your hands, form 2" balls. Place on a tray and put into your freezer for 30 minutes.
In the meantime, grab two shallow plates and place panko crumbs, paprika, and garlic salt into one. In the other spread mayo evenly. Once your rattlesnake balls have cooled, roll them in mayo and then the panko mixture. Repeat until you have approximately 10-15 of them.
Mayo is a great substitute for egg and milk mixture some usually use to coat their fried goods. Mayo has lots of the same fats and proteins. I also use it as a binder for chicken and love how it always gives that fried look because it renders down.
Once your griddle or cast iron is preheated to high heat, add your butter. Once heated shallow fry all your balls. Rolling every 2 minutes to a new area to give a crispy exterior on all sides. Do not overcrowd this rattlesnake bite recipe. Serve with your favourite dipping sauce and enjoy.
