I can confidently say that this Chinese food lemon chicken recipe has finally been mastered. Who knew it would just take pancake mix lemon chicken to be the trick.
I stumbled across this phenomenon when doing a challenge with some of my Instagram friends. We did a chicken ball competition with a side of chicken and waffles and thus, how this recipe came about. The sweetness from the pancake/waffle mixture not only sweetened it up but made a thick enough batter just like American Chinese food.

CHINESE FOOD LEMON CHICKEN RECIPE
PREP TIME: 10 Minutes
COOK TIME: 20 Minutes
TOTAL TIME: 30 Minutes
Chicken Breast (2-4 cut in 1" cubes)
Pancake Mix (1 cup)
Water (1/4 cup)
Butter (1/4 cup, for frying)
Chicken Broth (1 cup)
Soy Sauce (1/3 cup)
Lemon Juice (about 2 lemons, 4 Tbsp)
Garlic (minced, 2 cloves)
Sugar (1/4 cup)
Honey (4 Tbsp)
Corn Starch (1 Tbsp)
Red Pepper Flakes (optional, a pinch)
Sesame Seeds (optional, to garnish)
First, make the lemon chicken sauce by grabbing a medium size bowl and adding all sauce ingredients (except the sesame seed garnish) and stir thoroughly.
Prepare your chicken breasts by cutting them into 1" cubes and set them aside. Next heat your butter in a large saucepan on medium heat. While it is heating up, mix your pancake mix and water together. Add the water slowly as you want a thicker texture than regular pancakes and might not need the full 1/4 cup.
Once your butter is melted and heated up, dip each 1" cube of chicken into the pancake mixture and fry on each side for approximately 5 minutes each side. Do this with all the chicken making sure not to overcrowd the pan. Once all your chicken is fried, set it aside on a plate lined with a paper towel to absorb the grease.
Using the same pan, add your sauce mixture and bring to a boil. Once to a vigorous boil, reduce heat and add your fried chicken and toss. Optional, garnish with sesame seeds. Enjoy over rice or your favourite side.
