Ingredients: Corn (2 cans) Edamame (1/2 cup chopped) Flour (1 cup) Marble Cheese (1/2 cup)

Eggs (2 large) Baking Powder (1 tsp)

Garlic (3 cloves, minced)

Parmesan Cheese (1/3 cup) Salt and Pepper (to taste) Chili Powder (1 tsp) Olive Oil (1/3 cup) Directions: 1. Rinse corn then add to a large bowl. Pat dry to remove majority of moisture. Add all other ingredients into bowl (except for oil olive, this will be used to fry the fritters). Mix thoroughly.

2. In a large frying pan, add oil on medium high heat. Once oil is hot, form large balls of the corn mixture and add to pan. Using a large spatula, smash the fritters into 1/2 inch patties. Fry on each side for approximately 8 minutes per side. 3. Optional: serve with a dollop of sour cream.
