Zucchini Roses | 30 Minute Recipe


Zucchini Pizza Roses

Spicing up side dishes, especially vegetable, not only accelerates the flavor but can add an extra element to date night. These zucchini roses are decadent FUN.

Ingredients: - Zucchini (1, sliced) - Pizza Sauce ( Tbsp)

- Pepperoni (1/2 cup)


Directions:

- Preheat your oven to 400 degrees. Spread a thin layer of pizza sauce at the bottom on a small baking dish. Slice your zucchini, long ways, very thinly, 1/8" thick. I used a cheese slicer, but you can use a sharp knife. You will be using 3 slices of zucchini per rose.

- Spread a thin layer of pizza sauce (approximately 1/4 Tbsp) on each layer. Add two pepperoni slices to each layer. Roll each zucchini layer, one at a time (3 in total), layering into a rose. I like to space the pepperoni to ensure they do not overlap each other.

- You can use a toothpick to hold them together but I've found with the pizza sauce they stay together. Add each rose to the baking dish. Cook for 20 minutes.
