HOW TO MAKE QUESO SCALLOPED POTAOTES
We did this recipe open fire, but you can do it in a BBQ or oven. Whichever way you prefer to cook this Queso scalloped potatoes recipe.
INGREDIENTS
Cream Cheese (1 block or container) Chorizo Sausage (1 lb)
Sour Cream (1 cup)
Marble Cheese (1 cup, cubed)
Mozarella Cheese (1 cup, cubed) Diced Tomatoes (1 can) Red Pepper (1/2 chopped) Jalapeno (1, diced) Garlic (2 cloves, minced) Cumin (1/2 Tbsp) Salt and Pepper (to taste)
Paprika (1/2 Paprika) Chili Powder (1/2 Tbsp)

Potatoes (4-5 thinly sliced)
STEP 1: PREPARE THE QUESO SAUCE
In a aluminum pan, add your cream cheese, chorizo sausage, sour cream, red pepper, diced tomatoes, jalapeno, garlic, cumin, salt, pepper, paprika, chili powder, mozzarella cheese, and marble cheese. Place on your grill or oven at a medium high heat. After 20 minutes, break up the chorizo sausage into small pieces and mix thoroughly. Continue stirring until the sauce is creamy and your sausage is completely browned and cooked.
STEP 2: LAYER THE POTATOE and COOK
Thinly slice your potatoes using a mandolin or by hand. Arrange a layer of sliced potatoes in an aluminum pan. Pour your queso sauce over the potatoes. Sprinkle more shredded cheese on top (optional). Cover with aluminum foil and cook on medium heat for 1 hour. Remove the aluminum foil and cook for another 30-45 minutes (depending the thickness of your potatoes) and crisp up the top.
STEP 3: REST and SERVE
Allow the potatoes to rest for 10 minutes before serving. Garnish with fresh parsley or sliced green onions.
