Adobo Filipino Chicken Recipe. Smoked Adobo Chicken

WHAT YOU'LL NEED

A PELLET GRILL

For this cook, I used my Pit Boss Grills Navigator

PELLETS





INGREDIENTS

Chicken Drumstick or Thighs (4-8)

Soy Sauce (1 cup)

Rice Wine Vinegar (1/2)

Olive Oil (2 Tbsp)

Garlic (4 cloves, minced)

Ginger (1 Tbsp, minced)

Basil (1/2 Tbsp)

Cornstarch (1 Tbsp)

Water (1/4 cup)


DIRECTIONS

First prepare the adobo marinade by adding soy sauce, rice wine vinegar, olive oil, garlic, ginger, and basil into a large dish or zip lock bag. Add your chicken, toss it, and put it into the refrigerator for 24 hours to marinade.


We will smoke and then braise the chicken for this Adobo Filipino chicken recipe. Preheat your pellet smoker to 275 degrees. Place wet marinated chicken directly on the grill (save the remainder marinade). Smoke for 20-30 minutes cooking the chicken halfway.


Next, turn your grill up to 400 degrees, place a cast iron skillet on your grill and add your remaining marinade. In a separate small bowl mix the water and cornstarch together till there are no clumps (This will thicken your sauce). Add to the marinade and place chicken directly into the sauce. Grill for another 30 minutes or until your chicken is 175 degrees.


Serve with your favourite sides, but traditionally is enjoyed with place rice, potatoes, and carrots.
